Cauliflower Mock Potatoes (Adapted from Chef Lisa Marie's recipe)
Ingredients:
-1 large head cauliflower, rinsed and hacked up
-water to boil
-kosher salt (big pinch)
-4 cloves garlic (roasted)
-1 large onion, thinnly sliced
-fresh ground black pepper
-1TB extra virgin olive oil or flaxseed oil (optional)
Method:
1) Preheat oven to 375.
2) Toss your garlic in a foil package and bake for 30 minutes, or until soft and lightly browned.
3) Caramelize onion in a saucepan using oil of choice (I like olive)
4)Bring water to a boil, toss in chopped up cauliflower and kosher salt.
Cook about 5 minutes, or until just tender. Remove from heat and drain, but reserve about 1/2 cup of the water.
6) When garlic, onion and cauliflower are ready, toss them in the food processor. If moisture is lacking, pour in a small amount of the reserved cauli-water
7) Blend until just smooth and garnish with black pepper and a TB of olive or flaxseed oil, if desired.
Although it's a little to crazy hot in Ottawa to be standing in front of the stove, this is a really fantastic side-dish served chilled or warm.
